7 Veggies You Need To Make Into Chips Right Now

It might not be as fun as having a surplus of leftover chocolate lying around, but having extra veggies in your pantry doesn’t have to be a telltale sign that a weekend of canning is in your future. And you can ditch the vegetable stew idea (it’s almost summer). There is a way easier and interesting way to utilize your vegetables that even your kids will love. Do what everyone else does with healthy foods: turn them into sinful snacks! Sinful tasting, that is. Here are 7 vegetables that make excellent chips.

Beets

The worst part about making beet chips is that they turn your hands purple. Outside of that, it’s basically a slice and bake game. Here’s what we all look like when we try to make beet chips for the first time.

 

Kale

Line a baking sheet with parchment paper. Cut the stems from the kale and tear the leaves into chip size pieces. Put the leaves in a bowl and add some oil to coat (about 2 Tbsp). Massage the oil into the kale. Add whatever spices you’d like (salt, pepper, cayenne, nutritional yeast, etc).

Bake at 300-degrees for about 20 minutes or until crispy.

Sweet Potatoes

A great source of vitamin A (beta-carotene), these chips are better than pie. Chowhound insists the secret ingredient to making these chips is adding a splash of vinegar before baking.

Snow Peas

The Smart Cookie has a parmesan crisp recipe (so much for eating healthy) that involves just a few steps: Sprinkle with red pepper flakes, salt, and garlic powder.

Bake for 15 minutes or until they start turning golden brown. Flip the veggies and sprinkle with parm. Bake for another 5 to 10 minutes or until crisp.

Carrots

Lovely alone or with other vegetable friends, the bright orange color of carrots makes a bowl of veggie chips shine. Try this recipe that involves just about everything in this list.

 

Taro

This underutilized, fiber-full root fruit can be made sweet or savory. A great alternative to potatoes, you can make these chips in about 30 minutes just by drizzling with oil and salt and popping into the oven.

Nori

All you need is a store bought sheet of nori, some olive oil and salt. The recipe only takes a couple of minutes from beginning to end.
