The Only Pot Brownie Recipe You’ll Ever Need

When we put out the call for the ultimate marijuana brownie recipe, our prayers were answered by Nick Testa, chef of Bua in New York City. Turns out, Nick has been tinkering with cannabis cooking for a while and is in the process of launching a monthly dinner series around it. And since he has a big sweet tooth, weed brownies just made sense. The secret to these brownies, which come out almost like fudge, is malt chocolate. Says Nick:

It’s based on a recipe from a 1937 edition of the Better Homes and Gardens cookbook, which I got for a birthday present four years ago from my brother because he knows I love nostalgic cooking and cookbooks.

How strong is this marijuana brownie?

Let’s just say I ate one of them and I had to have my girlfriend physically pull me out of the cereal aisle in the supermarket because I couldn’t move anymore. The high lasts for about four hours. It’s different, depending on the weed that you use. I use a hybrid and it puts me in couch-lock. The recipe yields about 36 squares, but out of the 36, a half brownie would be okay for somebody who’s a novice.

Here now is his recipe for the ubiquitous canna-munchie.

Fudgy Canna-Butter Brownies

Servings: About 36 1” brownies or 72 ½” brownies

  • 5 ounces semisweet chocolate bar, chopped
  • 2 ounces milk chocolate bar, chopped
  • ¼ cup Bosco chocolate syrup
  • 8 Tablespoons canna-butter* (see recipe below)
  • 3 Tablespoons cocoa powder
  • 3 large eggs
  • 1 ¼ cup sugar
  • ½ teaspoon salt
  • 2 teaspoons pure vanilla extract
  • 5 Tablespoons malted milk powder
  • 1 cup all-purpose flour
  1. Preheat oven to 350°. Grease and flour the bottom and side of an 8-inch square baking dish.
  2. In a large saucepan, melt the canna-butter over very low heat, stirring occasionally. Remove from the heat. In heatproof bowl over double boiler, melt both chocolates and syrup until smooth. Whisk in cocoa powder, then melted canna-butter. Whisk until smooth and set aside to cool slightly.
  3. In a medium bowl, whisk together eggs, sugar, salt, vanilla and malt powder until combined. Whisk chocolate mixture into egg mixture until smooth, then slowly mix in flour with wooden spoon until ingredients are combined. Pour the batter into the prepared pan and smooth the surface.
  4. Bake the fudge brownies in the center of the oven for 35-40 minutes. Cool on rack at room temperature for 1-2 hours.

*Canna-butter

  • 1 ounce marijuana bud or trim
  • 1 pound unsalted butter
  1. Preheat oven to 200°.
  2. Spread broken up marijuana onto a sheet tray.
  3. Bake marijuana for about 20 minutes. (This step, called decarboxylation, activates the THC.)
  4. Combine melted butter and marijuana in an ovenproof baking dish covered with a lid or aluminum foil, and set it in a large baking dish or roasting pan. Place in the middle of the oven and pour 1 inch of hot water into the baking dish.
  5. Raise the oven temperature to 250 degrees and let the butter cook for 3-5 hours, depending on desired potency and intensity of marijuana flavor.
  6. Remove from oven and strain through cheesecloth. Squeeze all the butter out into a small glass container and discard the marijuana. The color should be a beautiful green.
  7. Freeze until solid and save for baking of any kind.
